I use lean ground turkey which provides plenty of protein while keeping the fat content lower than beef. Ground turkey is affordable and easy to find at any grocery store.

Ingredients:

  • 1 pound lean ground turkey
  • 1/2 cup rolled oats
  • 1/2 cup diced onion
  • 1/2 cup shredded carrot
  • 1⁄4 cup chopped fresh spinach
  • 2 egg whites
  • 1⁄4 teaspoon dried thyme
  • 1⁄4 teaspoon garlic powder
  • 1⁄4 teaspoon salt
  • 1⁄4 teaspoon black pepper

Instructions:

  1. Preheat the oven to 375°F. Lightly coat an 8×4 inch loaf pan with nonstick cooking spray.
  2. In a large bowl, combine the ground turkey, oats, onion, carrot, spinach, egg whites, thyme, garlic powder, salt and pepper. Use clean hands to mix everything together well.
  3. Transfer the mixture to the prepared loaf pan, pressing it firmly into the pan.
  4. Bake for 25-30 minutes until the top is browned and the meatloaf reaches an internal temperature of 165°F.
  5. Let the meatloaf rest for 5 minutes before carefully removing it from the pan. Slice and serve warm.

Cooking Tips:

  • For extra flavor, use part ground turkey and part ground sirloin.
  • Substitute dried breadcrumbs for the oats if you prefer. Use Panko for the lightest texture.
  • Mix in other finely chopped veggies like celery, peppers or mushrooms.
  • Top with ketchup or barbecue sauce during the last 5 minutes of baking if desired.
  • Leftovers make great sandwiches or can be used crumbled in salads, soups or omelets.
