Sharing is caring!

Hey friends! I’m so excited to share with you my lightened-up version of classic meatloaf that’s just as comforting and delicious as the original. This Skinny Meatloaf is made with lean ground turkey, oats, egg whites, and lots of veggies, so you can feel good about what you’re eating. Plus, it comes together in just 35 minutes – perfect for a busy weeknight dinner!

Before we get cooking, you probably have some questions about my Skinny Meatloaf recipe. Here are the details:

What kind of meat is used?
I use lean ground turkey which provides plenty of protein while keeping the fat content lower than beef. Ground turkey is affordable and easy to find at any grocery store.

What binds it all together?
Rolled oats and egg whites act as the binder in this recipe. The oats absorb moisture and add great texture and fiber. The egg whites help hold everything together without extra fat from yolks.

What vegetables are included?
For extra nutrition, I add in diced onions, shredded carrots, and chopped spinach. You get vitamins, minerals and a boost of color. Feel free to switch up the veggies to suit your taste!

How long does it take to prep and cook?
You’ll need about 10 minutes of prep time to chop the vegetables and mix everything together. Then it bakes at 375°F for 25 minutes – so quick and easy.

What sides go well with it?
This meatloaf pairs nicely with mashed potatoes, roasted veggies, a fresh salad or even zucchini noodles. The possibilities are endless!

What makes this recipe skinny?
By using lean ground turkey, egg whites, and oats instead of breadcrumbs, this meatloaf has a fraction of the fat and calories of traditional recipes. But it still tastes amazing!

Now that you’ve got the scoop on my Skinny Meatloaf, let’s get cooking! You’ll be enjoying a hot, healthy meatloaf dinner in under 35 minutes.

Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes

  • 1 pound lean ground turkey
  • 1/2 cup rolled oats
  • 1/2 cup diced onion
  • 1/2 cup shredded carrot
  • 1⁄4 cup chopped fresh spinach
  • 2 egg whites
  • 1⁄4 teaspoon dried thyme
  • 1⁄4 teaspoon garlic powder
  • 1⁄4 teaspoon salt
  • 1⁄4 teaspoon black pepper

  1. Preheat the oven to 375°F. Lightly coat an 8×4 inch loaf pan with nonstick cooking spray.
  2. In a large bowl, combine the ground turkey, oats, onion, carrot, spinach, egg whites, thyme, garlic powder, salt and pepper. Use clean hands to mix everything together well.
  3. Transfer the mixture to the prepared loaf pan, pressing it firmly into the pan.
  4. Bake for 25-30 minutes until the top is browned and the meatloaf reaches an internal temperature of 165°F.
  5. Let the meatloaf rest for 5 minutes before carefully removing it from the pan. Slice and serve warm.

Cooking Tips:

  • For extra flavor, use part ground turkey and part ground sirloin.
  • Substitute dried breadcrumbs for the oats if you prefer. Use Panko for the lightest texture.
  • Mix in other finely chopped veggies like celery, peppers or mushrooms.
  • Top with ketchup or barbecue sauce during the last 5 minutes of baking if desired.
  • Leftovers make great sandwiches or can be used crumbled in salads, soups or omelets.
