Prep & Cooking Time:
Prep Time: 30 minutes
Cook Time: 20-25 minutes
Total Time: 1 to 1 hour and 10 minutes

  • 1 lb Sweet Potatoes (approx. 2 medium-sized), peeled and chopped
  • ½ cup Granulated Sugar
  • ¼ cup Brown Sugar, packed
  • ½ cup Unsalted Butter, melted
  • ¼ cup Evaporated Milk
  • 2 Large Eggs
  • 1 tsp Vanilla Extract
  • ½ tsp Ground Cinnamon
  • ¼ tsp Ground Nutmeg
  • ¼ tsp Salt
  • 1 package Refrigerated Pie Crusts
  • Optional: Whipped cream, for serving

  1. Commence by uniformly peeling and dicing the sweet potatoes to ascertain uniform cooking.
  2. Deploy the sweet potato pieces in a substantial pot and inundate them with water.
  3. Propel the water to a brisk boil utilizing high heat.
  4. When the boil is attained, mitigate the heat to medium, allowing the sweet potatoes to simmer until they reach a tender state, approximately within 15-20 minutes.
  5. Post attainment of tenderness, meticulously drain the water employing a colander and permit a brief cooling period.
  6. Relocate the sweet potatoes to a voluminous mixing bowl and proceed to mash them until a smooth texture is achieved, abolishing any lumps.
  7. To the mashed sweet potatoes, integrate granulated sugar, brown sugar, melted unsalted butter, evaporated milk, large eggs, vanilla extract, ground cinnamon, ground nutmeg, and salt harmoniously.
  8. Employing a whisk or a hand mixer, amalgamate well until a smooth, creamy composition is manifested.
  9. Concurrently with preparing the filling, preheat the oven to 350°F (180°C), ensuring its readiness for baking.
  10. Extend the refrigerated pie crusts on a surface lightly dusted with flour to avert sticking.
  11. Utilizing a round cookie cutter or a glass with a suitable rim, extract circles from the dough.
  12. Press the dough circles gently into the cavities of a lubricated mini muffin tin, fabricating mini pie shells and ensuring uniform distribution.
  13. Delicately ladle the sweet potato mixture into each shell, filling nearly to the brim while avoiding overfilling to preclude baking spillage.
  14. Position the mini pies in the preheated oven, baking for about 20-25 minutes.
  15. Maintain vigilant observation, and once the filling solidifies and the crust attains a golden hue, extract them from the oven.
  16. Permit the pies to cool within the tin for approximately 10 minutes to solidify the filling further and facilitate easier removal.
  17. Following initial cooling, transfer them to a wire rack to cool completely.
  18. Once thoroughly cooled, they are ready for serving. Optionally, embellish each mini pie with a dollop of whipped cream for an additional layer of indulgence before serving.

Cooking Tips:

  • Ensure sweet potatoes are very tender for a smooth, creamy filling.
  • Adjust sugar and spices according to taste; recipes are a guideline!
  • Avoid overfilling to prevent spillage.
  • Monitor baking closely for a golden crust and to avoid overcooking.
  • Cool slightly before serving; flavors meld beautifully as they cool.
  • Experiment with spices or additions to personalize the recipe.
  • Savor and enjoy the harmonious dance of flavors in each delightful bite!
