BBQ CHICKEN KABOBS with BACON and PINEAPPLE

Howdy, fellow food lovers! Warm weather is waving hello and it’s time we invite our grills to the party. Today, I’m sharing with you a BBQ gem that has won over my heart (and my taste buds) – the Chargrilled Chicken, Pineapple, and Bacon Skewers, generously coated with your go-to BBQ sauce. These skewers are like a flavor carnival happening right on your grill, where juicy chicken meets caramelized pineapple and bacon, creating a taste sensation you won’t forget.

If you’re wondering why you should give these a whirl, picture this – a burst of summer joy in every mouthful, and the sheer pleasure of making these delights outdoors. Trust me, the enticing aroma filling the air is worth the try alone.

Ingridients:

  • Two large chicken breasts (about 1 lb), cut into 1.5-2 inch pieces, lightly seasoned with salt
  • 1.5 cups of the BBQ sauce you swear by
  • 1 lb of bacon, cut into 1-1.5 inch slices
  • Fresh pineapple, cut into generous 2-inch chunks

Instructions:

  1. The first thing you’ll want to do is marinade the chicken chunks in one cup of the BBQ sauce for about 2-3 hours. This will allow the chicken to soak up all that beautiful BBQ tang and become juicier. If time isn’t on your side, no worries, just skip this and your skewers will still taste fantastic.
  2. Now, let’s deal with the bacon. Give it a quick zap in the microwave for about 2-5 minutes, depending on how thick your bacon is and how crispy you prefer it. Once done, set it aside to cool.
  3. This is where the magic begins – assembling your skewers. If you’re using wooden skewers, remember to pre-soak them in water for about an hour to avoid any charring. Next, thread the chicken, bacon, and pineapple onto your skewers in a repeating pattern. A quick tip here: fold over the thinner bacon slices and place them next to the chicken chunks, keeping a bit of space so everything cooks evenly.
  4. :Fire up that grill! Grill your skewers until the chicken reaches a safe internal temperature of 155-160 degrees F. When they’re almost done, brush on the remaining BBQ sauce for an extra burst of flavor and a gorgeous sheen.
  5. Once they’re off the grill, loosely cover them with foil and let them rest for about 5-10 minutes. This allows all those delicious juices to settle back into the chicken, ensuring a tender bite every time.
