Cook Time: 80 minutes
Total Time: 90 minutes

Ingredients:

  • 1 Tbsp smooth olive oil (15 ml)
  • 1 1⁄2 lbs beef stew meat, 1 inch chunks (675g)
  • 1 medium yellow onion, chopped (150g)
  • 3 cloves garlic, minced
  • 1 1⁄2 cups white rice (300g)
  • 1 14.5 oz can diced tomatoes (415g)
  • 3 cups beef broth (700ml)
  • 1 Tbsp Worcestershire sauce (15ml)
  • 1 1⁄2 tsp dried oregano
  • 3⁄4 tsp salt
  • 1⁄2 tsp black pepper
  • 1⁄4 tsp cayenne pepper
  • Minced parsley to garnish

Instructions:

  1. Heat oil in pot over medium-high heat. Brown beef chunks on all sides, 2-3 minutes each. Transfer to a plate.
  2. Reduce heat to medium. Cook onions and garlic 5 minutes, until soft and fragrant.
  3. Add rice and toast 2 minutes.
  4. Stir in remaining ingredients including beef. Boil then reduce heat to low.
  5. Simmer covered 60-70 minutes, until rice absorbs liquid and beef is fall apart tender.
  6. Stand 5 minutes before serving. Fluff with fork. Garnish with parsley.
