  • 1 can (15 ounces) Corn Kernels, drained
  • 1 can (15 ounces) Diced Tomatoes, drained

  • 2 cups Mexican Blend Cheese, shredded
  • 6 Flour Tortillas (8-inch size) or 8 Corn Tortillas
  • 1 cup Salsa
  • 1 cup Sour Cream

  • Salt & Pepper, to your taste
  • 1 tablespoon Olive Oil
