There’s just something so comforting about a big bowl of tender macaroni noodles covered in a creamy cheese sauce, with flavorful ground beef mixed into every bite.
It’s simple, delicious, and always a hit at the dinner table!
I’ve always been a fan of easy ground beef recipes. They’re affordable, filling, and there are so many different ways to turn a pound of ground beef into a delicious dinner.
And this Crock Pot Hamburger Helper is one of my favorite ways to do just that!
The great thing about making Hamburger Helper from scratch is that you get to control exactly what goes into the dish. No powdered cheese packets or complicated ingredients. Just ground beef, macaroni noodles, cheddar cheese, and a handful of pantry staples.
For this recipe, I like to brown the ground beef with onions and garlic before adding it to the slow cooker. This simple step gives the meat so much more flavor!
The beef then cooks with broth, tomato paste, Worcestershire sauce, and seasonings until everything is wonderfully flavorful.
Near the end of the cooking time, you’ll add the macaroni noodles directly to the crockpot. Once they’re tender, stir in milk and freshly shredded cheddar cheese to make the most delicious creamy cheese sauce.
The result is a rich, hearty pasta dish with plenty of cheesy goodness in every bite.
And the best part? You only need one skillet and your slow cooker to make the entire recipe!
It’s the perfect meal for those nights when you want a comforting homemade dinner without spending a lot of time standing over the stove.
Why you’ll love this recipe
There are so many reasons to love this homemade Crock Pot Hamburger Helper! It’s easy to prepare, made with simple ingredients, and perfect for feeding the whole family.
It’s an easy slow cooker dinner. After browning the ground beef, simply add the ingredients to the crockpot and let them cook. The macaroni and cheese are added near the end, so you don’t have to worry about standing over a pot of boiling pasta.
It’s made with simple ingredients. You won’t need anything fancy to make this recipe. Ground beef, pasta, broth, seasonings, milk, and cheddar cheese are all easy to find at the grocery store.
It’s incredibly creamy and cheesy. Freshly shredded sharp cheddar cheese melts into the seasoned pasta to create a rich, flavorful sauce. And because the macaroni cooks right in the slow cooker, it absorbs all of those delicious savory flavors!
It’s a family-friendly meal. This is one of those classic comfort food recipes that’s popular with both kids and adults. You can also adjust the seasonings to make the dish as mild or flavorful as you prefer.
It’s budget-friendly. A pound of ground beef, a few pantry ingredients, and some cheese can make six servings of this hearty dinner.
I also love that you can easily change the recipe by adding vegetables, using a different type of cheese, or swapping the ground beef for ground turkey.
It’s one of those recipes you’ll want to keep on hand for busy weeknights!
Ingredients
Here I explain the best ingredients for this Crock Pot Hamburger Helper recipe, what each one does, and substitution options. For the exact ingredient measurements, see the recipe card at the bottom of this post.
– Ground beef – I recommend using one pound of lean ground beef, preferably 85/15 or 90/10. This gives the recipe plenty of beef flavor without making the cheese sauce greasy. You can also use 80/20 ground beef, but you’ll want to drain the grease from the skillet after browning the meat.
– Yellow onion – adds a delicious, savory flavor to the ground beef. I recommend using one small yellow onion, finely diced. You can substitute a sweet onion or white onion if that’s what you have in the kitchen.
– Garlic – fresh minced garlic adds wonderful flavor to this homemade Hamburger Helper. I recommend using 2 cloves, but you can add another clove if you love garlic as much as I do!
– Tomato paste – just 2 tablespoons add a rich, savory flavor and a little acidity that balances the creamy cheese sauce. It also gives the sauce that classic orange-red color you expect from cheeseburger macaroni.
– Worcestershire sauce – one of my favorite ingredients for seasoning ground beef! It adds a rich, savory flavor that pairs perfectly with cheddar cheese. If you don’t have Worcestershire sauce, you can use soy sauce instead.
– Beef broth – I recommend using low-sodium beef broth for this recipe. The broth adds flavor to the ground beef and provides the liquid needed to cook the macaroni noodles directly in the slow cooker. You’ll need 3 cups, divided between the beginning of the recipe and the pasta cooking step.
– Paprika – adds a slightly sweet, peppery flavor to the dish. I like using regular paprika for the classic Hamburger Helper taste, but smoked paprika is also delicious if you prefer a slightly smoky flavor.
– Garlic powder – combines with the fresh garlic to give the sauce extra flavor. This is especially helpful since the broth and macaroni absorb the seasonings as they cook.
– Mustard powder – this is my secret ingredient for making the cheese sauce extra flavorful! The slightly tangy flavor balances the richness of the cheddar cheese. You can also use 1 teaspoon of Dijon mustard in place of ½ teaspoon of mustard powder.
– Salt and black pepper – used to season the ground beef and creamy sauce. Since the broth, cheese, and Worcestershire sauce all contain sodium, I recommend starting with the amount listed in the recipe and adding more salt after tasting the finished dish.
– Elbow macaroni – the classic pasta shape for Hamburger Helper! You’ll need 8 ounces of uncooked elbow macaroni, which is approximately 2 cups of dry pasta. Small shells or other short pasta shapes can also work, but cooking times may vary.
– Whole milk – adds creaminess to the cheese sauce. I recommend using whole milk for the richest texture, but 2% milk will also work. You’ll only need ½ cup because the pasta is already cooked in the seasoned beef broth.
– Sharp cheddar cheese – this is what makes homemade Hamburger Helper so delicious! You’ll need 2 cups of freshly shredded cheddar cheese. I always recommend shredding cheese from a block because it melts more smoothly than bagged shredded cheese.
What’s the best ground beef to use?
For this recipe, I recommend using ground beef that’s 85% lean and 15% fat.
This gives you a nice balance of flavor and moisture without creating too much grease in the finished dish.
You can also use 90/10 ground beef if you prefer a leaner option.
If you’re using 80/20 ground beef, that’s totally fine! Just make sure to drain the excess grease from the skillet before adding the meat to the slow cooker.
I don’t recommend skipping the browning step.
Cooking the beef in a skillet before adding it to the crockpot gives it a delicious browned flavor and allows you to remove any excess grease.
It also gives the onions and garlic time to soften, making them perfectly tender in the finished dish.
Instructions
I’ve included step-by-step instructions below to make this recipe super easy to follow at home. For the full detailed recipe instructions and ingredient quantities, scroll to the recipe card at the bottom of this post.
I recommend using a 6-quart slow cooker for this recipe. This gives the ground beef and macaroni plenty of room to cook, and makes it easy to stir in the cheese at the end.
Step 1. Brown the ground beef
Place a large skillet on the stove over medium-high heat.
Add the ground beef and diced onion to the skillet.
Use a spatula to crumble the beef into small pieces as it cooks.
Cook for approximately 6-8 minutes, or until the ground beef is completely browned and the onions have softened.
Add the minced garlic and cook for another minute, stirring frequently.
Drain any excess grease from the skillet.
I recommend breaking the beef into relatively small pieces so that it mixes evenly with the macaroni noodles. This way, you’ll get a little seasoned beef in every bite!
Step 2. Season the beef
Add the tomato paste and Worcestershire sauce to the skillet with the cooked ground beef.
Stir to combine everything and cook for another minute.
The tomato paste will coat the beef and begin to darken slightly, adding even more flavor to the dish.
Next, add the paprika, garlic powder, mustard powder, salt, and black pepper.
Stir until the beef is evenly coated in all of the seasonings.
Step 3. Add everything to the crockpot
Transfer the seasoned ground beef and onion mixture to a 6-quart slow cooker.
Pour 2 cups of beef broth into the crockpot and stir to combine.
Place the lid on the slow cooker.
Cook on low for approximately 2-3 hours, or on high for 1-2 hours.
Since the ground beef is already cooked, this step is mainly about allowing the broth and seasonings to develop a rich flavor.
The beef will become tender and absorb the delicious combination of spices, Worcestershire sauce, and tomato paste.
Step 4. Add the macaroni noodles
Approximately 30-45 minutes before you’re ready to serve dinner, turn the slow cooker to high.
Stir the uncooked elbow macaroni into the seasoned beef mixture.
Pour in the remaining 1 cup of beef broth, preferably warmed, and stir to combine.
Make sure the macaroni is well coated with liquid. Gently press any exposed noodles into the broth.
Place the lid back on the crockpot and cook on high for approximately 25-40 minutes, or until the pasta is tender.
The exact cooking time will depend on your slow cooker and the type of macaroni you’re using. Some slow cookers may take longer to bring the liquid to a simmer.
I recommend checking the pasta after 15-20 minutes and giving everything a gentle stir.
Continue checking every 10 minutes until the noodles are cooked to your liking.
If the mixture looks too dry before the macaroni is tender, add another ¼ cup of warm beef broth.
Important tip! Don’t add the macaroni at the beginning of the recipe. Pasta cooks much faster than ground beef and can become mushy if it sits in the slow cooker for several hours.
Step 5. Make it cheesy
Once the macaroni is tender, turn the slow cooker off.
Pour ½ cup of whole milk into the crockpot and stir to combine.
Next, add 1½ cups of freshly shredded sharp cheddar cheese.
Gently stir until the cheese melts into the hot pasta and creates a creamy sauce.
Sprinkle the remaining ½ cup of cheddar cheese evenly over the top.
Place the lid back on the slow cooker and let the cheese melt from the residual heat for approximately 5-10 minutes.
You should now have a delicious combination of tender macaroni, seasoned beef, and a creamy cheddar cheese sauce!
Step 6. Serve the Hamburger Helper
Remove the lid and gently stir everything together.
Taste the pasta and add additional salt or black pepper, if needed.
If the sauce is too thick, add a splash of warm milk until it reaches your preferred consistency.
For serving, I like to sprinkle a little fresh parsley over the top for a pop of color.
You can also add extra shredded cheddar cheese if you want to make it even cheesier!
Serve immediately, while the sauce is warm and creamy.
Recipe tips
This Crock Pot Hamburger Helper is incredibly easy to make, but I’ve included a few tips to help you get the best results every time.
Brown the ground beef first. I always recommend cooking ground beef in a skillet before adding it to the slow cooker. Not only does this improve the flavor, it also allows you to drain any excess grease that could make the cheese sauce oily.
Use freshly shredded cheese. This is one of my favorite tips for any homemade cheese sauce! Bagged shredded cheese contains anti-caking additives that can affect how smoothly it melts. Grating cheddar cheese from a block gives you a creamier sauce.
Don’t add the pasta too early. This is probably the most important tip for making Hamburger Helper in the crockpot. If the macaroni cooks for several hours, it will become overly soft. Wait until the final 25-40 minutes to add the dry noodles.
Check the pasta before the cooking time is up. Every slow cooker heats a little differently. I recommend checking the noodles after 15-20 minutes and stirring occasionally to prevent them from sticking together.
Use low-sodium beef broth. The cheddar cheese and Worcestershire sauce already add salt to the recipe. Low-sodium broth allows you to control how salty the finished dish tastes.
Add the cheese at the end. Cooking shredded cheddar for several hours can cause the sauce to separate or become grainy. Wait until the macaroni is fully cooked, then stir in the cheese with the heat turned off.
Don’t overcook the macaroni. Once the noodles are tender, turn off the slow cooker and finish the cheese sauce. The noodles will continue to absorb some liquid as the dish sits.
Serve it right away. This recipe is best served fresh, when the macaroni is tender and the cheese sauce is extra creamy.
How to make the best homemade cheese sauce
If you love the creamy cheese sauce in classic Hamburger Helper, you’ll definitely want to follow a few simple steps when making this homemade version.
First, use a good-quality sharp cheddar cheese.
Sharp cheddar has a stronger flavor than mild cheddar, which means you get that delicious cheesy taste without needing to add too much cheese.
I also recommend using whole milk.
The additional fat in whole milk gives the finished sauce a richer texture, although 2% milk can be used if that’s what you have on hand.
Another important step is waiting until the end of the cooking process to add the cheese.
Once the macaroni is tender, turn the slow cooker off before adding the milk and shredded cheddar.
The residual heat from the beef and pasta will melt the cheese without exposing it to prolonged high heat.
This helps prevent the cheese sauce from becoming oily or grainy.
If you want an even creamier version, you can add 2 ounces of softened cream cheese along with the milk and cheddar.
The cream cheese will make the sauce thicker and richer, with a slightly tangy flavor.
And if you love extra cheesy Hamburger Helper, feel free to sprinkle another handful of cheddar over the top before serving!
Recipe variations
One of the things I love about homemade Hamburger Helper is how easy it is to change the ingredients based on what you have in the kitchen.
Here are a few delicious variations to try!
Cheeseburger Hamburger Helper
For an extra cheesy version that tastes like a classic cheeseburger, replace ½ cup of the sharp cheddar cheese with ½ cup of shredded American cheese.
You can also add 1 tablespoon of ketchup and an additional teaspoon of mustard to the ground beef mixture.
The combination of beef, cheese, ketchup, and mustard gives the pasta a delicious cheeseburger-inspired flavor.
Bacon cheeseburger Hamburger Helper
If you love bacon cheeseburgers, this variation is for you!
Cook 6 slices of bacon until crispy, then crumble them into small pieces.
Prepare the Hamburger Helper according to the recipe instructions.
After stirring in the cheddar cheese, sprinkle the cooked bacon over the top.
I recommend saving a little bacon for garnish, so it stays crispy.
You can also add sliced green onions for a little extra flavor.
Spicy Hamburger Helper
Want to add a little kick to this creamy pasta dish?
Add ¼ teaspoon of cayenne pepper or ½ teaspoon of crushed red pepper flakes to the ground beef seasoning.
You can also use pepper jack cheese in place of one cup of the cheddar cheese.
For even more spice, add a small can of diced green chilies to the crockpot with the cooked ground beef.
The creamy cheese sauce balances the spicy ingredients perfectly!
Hamburger Helper with vegetables
This is a great way to add more vegetables to an easy family dinner.
I recommend adding 1 cup of frozen peas or mixed vegetables during the final 20-30 minutes of cooking.
You can also stir in 1 cup of finely chopped spinach when adding the cheddar cheese.
The spinach will wilt into the hot pasta without needing additional cooking time.
For a broccoli version, add small broccoli florets when you add the macaroni, checking that both become tender before serving.
Ground turkey Hamburger Helper
If you prefer ground turkey, you can easily use it instead of ground beef.
Simply substitute one pound of ground turkey for the beef and cook it with the onions and garlic until fully cooked to 165°F.
I recommend using 93% lean ground turkey for the best flavor and texture.
You can also substitute chicken broth for the beef broth if you’d like a slightly lighter flavor.
Taco Hamburger Helper
For a delicious Tex-Mex version, replace the paprika, garlic powder, and mustard powder with 2 tablespoons of taco seasoning.
Add one 10-ounce can of diced tomatoes with green chilies to the slow cooker with the beef.
Because the tomatoes contain liquid, start with slightly less broth, then add more as needed when cooking the pasta.
Finish with cheddar cheese or a Mexican cheese blend.
I love topping this version with diced avocado, sliced jalapenos, and fresh cilantro!

Frequently asked questions
Can you put raw ground beef in a slow cooker?
Some slow cooker recipes are designed for raw ground beef, but I recommend browning it first for this Hamburger Helper recipe.
Browning gives the meat more flavor and allows you to crumble it into small pieces before adding the other ingredients.
It also makes it easy to drain excess fat.
This helps create a smoother, creamier cheese sauce instead of having a layer of grease on top.
For this recipe, cook the ground beef completely in a skillet before transferring it to the slow cooker.
Can you put uncooked pasta in the crockpot?
Yes! You can cook uncooked macaroni directly in the slow cooker, which is exactly what makes this recipe so convenient.
The important thing is to add the pasta near the end of the cooking process.
Macaroni noodles generally cook in approximately 25-40 minutes on high once the liquid is sufficiently hot, although some slow cookers may take longer.
If you add the pasta at the beginning, it will absorb too much liquid and become mushy.
For the best results, add the dry noodles during the final portion of cooking and check them frequently.
Why is my Hamburger Helper watery?
If your Hamburger Helper has too much liquid, it may be because the pasta hasn’t absorbed all of the broth yet.
Give the noodles a few more minutes to finish cooking, then check the consistency.
The sauce will also thicken slightly once you add the shredded cheddar cheese.
If the pasta is already tender and the sauce is still a little thin, turn the slow cooker off and let the dish rest uncovered for approximately 5 minutes.
Avoid continuing to cook the noodles for too long, since they can become mushy.
Why is my Hamburger Helper dry?
Pasta absorbs liquid as it cooks, and it will continue absorbing moisture as it sits.
If the macaroni looks dry before it’s completely cooked, add another ¼ cup of warm beef broth and stir.
If the pasta is already tender but the cheese sauce is too thick, add a splash of warm milk.
Start with just a couple of tablespoons at a time until the sauce reaches your preferred consistency.
Can you use a different type of pasta?
Absolutely!
While elbow macaroni is the traditional pasta shape for Hamburger Helper, you can also use small shells, rotini, or penne.
I recommend choosing a small pasta shape that cooks relatively quickly.
Larger pasta shapes may need more liquid and additional cooking time.
If you’re substituting another pasta, check it frequently after adding it to the slow cooker and adjust the broth as needed.
Can you make Hamburger Helper without milk?
Yes, although the sauce won’t be quite as creamy.
You can replace the milk with an equal amount of additional beef broth.
The cheddar cheese will still melt into the warm pasta and create a cheesy sauce.
For another option, you can use half-and-half instead of milk if you want an even richer texture.
Can you double the recipe?
Yes! This is a great recipe to double when you’re feeding a crowd.
You’ll need 2 pounds of ground beef, 16 ounces of macaroni, 4 cups of cheddar cheese, and twice the amount of the remaining ingredients.
I recommend using an 8-quart slow cooker for a double batch.
Make sure there’s enough room for the pasta to expand as it cooks, and stir occasionally after adding the macaroni.
The cooking time may be slightly longer with a larger batch, so check the pasta for tenderness before serving.
What to serve with Hamburger Helper
This Crock Pot Hamburger Helper is a hearty meal on its own, but it’s also delicious served with a simple side dish.
Since the recipe combines ground beef, pasta, and cheese, I like pairing it with something fresh or crunchy.
A green salad is one of my favorite options. Crisp lettuce, tomatoes, cucumbers, and a tangy vinaigrette are a great contrast to the rich cheddar cheese sauce.
Garlic bread is another delicious choice. Warm, buttery garlic bread is perfect for scooping up any extra cheese sauce left on the plate.
Steamed broccoli is an easy vegetable side dish that pairs perfectly with cheddar cheese. You can serve it on the side or stir it directly into the Hamburger Helper.
Roasted green beans are another great option. Toss fresh green beans with olive oil, salt, and pepper, then roast until tender with slightly crispy edges.
Coleslaw also works well with this recipe. The cool, crunchy cabbage adds a nice contrast to the warm, cheesy pasta.
If you’re serving this dish for a family dinner, I’d recommend keeping things simple with a fresh salad and garlic bread.
It’s an easy, comforting meal that doesn’t need much else!
How to make it ahead of time
If you want to save time when preparing this recipe, there are a few things you can do in advance.
The easiest option is to brown the ground beef with the onions, garlic, tomato paste, Worcestershire sauce, and seasonings a day before making the recipe.
Allow the cooked beef mixture to cool slightly, then transfer it to an airtight container and refrigerate promptly.
When you’re ready to cook, add the seasoned beef mixture to the slow cooker with the beef broth and follow the remaining instructions.
You can also shred the cheddar cheese in advance and store it in a separate airtight container in the refrigerator.
I don’t recommend cooking the macaroni ahead of time if you plan to prepare the entire dish in the slow cooker.
The pasta tastes best when it’s added during the final part of cooking and served shortly after the cheese sauce is prepared.
If you’re making this recipe for meal prep, I recommend dividing the finished Hamburger Helper into individual containers while it’s still fresh.
That way, you can easily reheat a portion for lunch or dinner later in the week.
How to store and reheat leftovers
One of my favorite things about making a big batch of homemade Hamburger Helper is having leftovers for another meal.
The pasta will absorb some of the cheese sauce as it sits, but it’s easy to make it creamy again when reheating!
How to store it
Allow the Hamburger Helper to cool slightly, then transfer it to shallow, airtight containers.
Refrigerate within 2 hours of cooking.
Leftover Hamburger Helper will stay good in the refrigerator for 3-4 days when stored properly at 40°F or below.
I recommend storing it in smaller containers so the pasta cools quickly and you can easily reheat individual portions.
How to reheat it
My favorite way to reheat leftover Hamburger Helper is in the microwave.
Place a serving in a microwave-safe bowl and add 1-2 tablespoons of milk.
Cover loosely and microwave in 30-60 second intervals, stirring between each interval, until the pasta is heated through to 165°F.
The milk helps loosen the cheese sauce, which naturally thickens in the refrigerator.
You can also reheat larger portions in a skillet on the stove over medium-low heat.
Add a splash of milk or beef broth, then stir occasionally until the pasta is hot throughout.
I recommend heating it gently to keep the cheese sauce creamy.
Can you freeze Hamburger Helper?
Yes, you can freeze this homemade Hamburger Helper, although the pasta and cheese sauce may have a slightly different texture after thawing.
Pasta can soften during freezing and reheating, while dairy-based cheese sauces sometimes separate.
For the best quality, I recommend freezing individual portions in airtight, freezer-safe containers for up to 2 months.
Thaw the pasta overnight in the refrigerator before reheating.
Add a little milk and stir gently while heating to help bring the cheese sauce back together.
If you’re planning to make a large batch specifically for freezing, you can also freeze just the cooked, seasoned beef mixture.
Then prepare fresh macaroni and add the cheese sauce when you’re ready to enjoy it.
