Country Apple Fritter Bread

This Country Apple Fritter Bread recipe is the best way to get bakery flavor without a deep fryer. It is a soft, moist quick bread packed with chunks of Granny Smith apples and ribbons of brown sugar cinnamon. You do not need yeast or fancy equipment. Just mix the simple batter, layer it with the spiced apples, and bake until golden. The vanilla glaze adds a sweet, crackly finish that makes every slice taste like a donut. It stays tender for days and is perfect for using up fresh apples.

Ingredients

Bread batter

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¾ cup granulated sugar
  • 2 large eggs
  • ¾ cup milk
  • 2 teaspoons vanilla extract
  • ½ cup unsalted butter melted and slightly cooled

Apple mixture

  • 2 cups apples peeled and diced small (about 2 medium apples)
  • cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon all-purpose flour

Cinnamon swirl

  • cup brown sugar
  • 2 teaspoons ground cinnamon

Glaze

  • 1 cup powdered sugar
  • 2 –3 tablespoons milk or cream
  • ½ teaspoon vanilla extract optional

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment if desired.
  • Mix apples with brown sugar, cinnamon, and 1 tablespoon flour. Set aside.
  • Mix cinnamon swirl ingredients in a small bowl.
  • Whisk flour, baking powder, salt, and cinnamon in a medium bowl.
  • In a large bowl, whisk sugar and eggs until smooth. Add milk and vanilla, then whisk in melted butter.
  • Add dry ingredients to wet ingredients and stir just until combined.
  • Layer ⅓ batter into pan. Top with ⅓ apples and ⅓ swirl. Repeat twice, finishing with apples and swirl on top.
  • Swirl gently with a knife a few times.
  • Bake 55–65 minutes. Tent with foil if browning too quickly.
  • Cool 15 minutes in pan, then transfer to a rack.
  • Whisk glaze and drizzle over cooled (or slightly warm) loaf. Slice and serve.

Notes

Granny Smith or Honeycrisp apples work best.
For clean slices, cool the loaf fully before cutting.
Freeze slices unglazed for best texture, then glaze after thawing.
